煮:lazy tea eggs

某人吃滷肉飯樂此不疲,上次配買的茶葉蛋,今回自己做!

{懶人茶葉蛋}

  1. 凍水下走地蛋,煮 5 分鐘至外層全熟取出,以小鐵匙隨意敲碎蛋殼。
  2. 鍋中下蒸魚豉油、普洱茶葉、八角、五香粉及連皮薑片,水滾後下蛋煮 1 分鐘,熄火。
  3. 蛋連滷汁攤涼後放入雪櫃,滷至入味即成。

{啤註:雞蛋無須煮太久,否則蛋黃外層會變青灰色。}
