煮:baked whole tomato & egg

訪問了最近網上爆紅的 green monday 烹飪顧問素媽媽,因利乘便,也跟大家分享這個又健康又可口又見得大場面又易做到唔信的原個焗蕃茄!

{原個焗茄蛋}

  1. 有機大蕃茄洗淨、抹乾,平切頂部,挖空成茄殼,打一隻蛋。
  2. 蕃茄肉、芝士(今次是用 parmesan cheese)、黑胡椒、少許鹽撈勻,鋪在蛋面。
  3. 焗 20 分鐘,以羅勒葉裝飾即成。

{啤註:焗蕃茄無須用太貴的蕃茄;非素食者可加入少許煙肉,即成靚靚早餐!}

席間素媽還準備了粟米片炸豆腐球,入口極清爽香脆,驚艷!做法是將布包豆腐加入少許冬菇和筍粒以馬蹄粉搓成一口小球,外層撲麵粉、蘸蛋(如是 vegan 可略去)、滾粟米片,再以高身小鍋下棕櫚油/無味椰油炸至金黃即可。吃時沾馬拉黑醬油 + 羅望子醬 + 椰糖 + 花生碎調成的汁。
